On today's show we talked about an easy, yummy kid friendly Cinco De Mayo salad. Here it is and let us know what you think.
Vegan Mexican Salad 4 cups salad greens, chopped into bite size pieces 2 cups red cabbage or red endive, thinly sliced Garnish: Toasted pepitas (pumpkin seeds) Dressing 2 medium ripe avocados, mashed 3 tablespoons tofu sour cream (Tofutti Brand) 1/2 cup olive oil 1/3 cup fresh lime juice (or brown rice or apple cider vinegar) 1/2 teaspoon chili powder 1/4 teaspoon sea salt Combine all the dressing ingredients together in a small bowl and whisk to blend. Adjust the seasonings to taste. Set aside. Toss together lettuce and red cabbage and/or red endive in a large salad bowl. Just before serving, add the dressing mixing/tossing well. Cut up apples with peanut butter, almond butter, yogurt, hummus and leave them on the counter for when the kids get in from school.
